Here is a recipe for Filipino adobo chicken:
Ingredients:
2 lbs chicken (cut into serving pieces)
1/2 cup vinegar
1/2 cup soy sauce
1/2 cup water
1 head garlic (minced)
1 onion (chopped)
3 bay leaves
1 tsp black peppercorns
2 tbsp cooking oil
Instructions:
In a large pot or Dutch oven, heat the oil over medium-high heat. Add the chicken and cook until lightly browned on all sides.
Add the garlic and onion, and sauté until fragrant.
Add the vinegar, soy sauce, water, bay leaves, and black peppercorns to the pot. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30-40 minutes, or until the chicken is fully cooked and tender.
Remove the chicken from the pot and set it aside. Increase the heat to medium-high and let the sauce simmer and reduce until thickened, about 10-15 minutes.
Once the sauce has thickened, add the chicken back to the pot and toss to coat it in the sauce.
Serve the adobo chicken hot over steamed rice.
